Sauvignon Blanc, taken somewhere more interesting.
A richer, more textural take on Australian Sauvignon Blanc from Circulus on the Bellarine Peninsula. Estate fruit is wild fermented in barrel, building depth and texture around the freshness rather than covering it up.
Bellarine Peninsula / Geelong, Victoria · Fumé Blanc · 2026
What to expect
Bright freshness · Barrel-derived richness · Texture · Long persistent finish
Drink this when
You think you know Sauvignon Blanc and want to be proved wrong.
Worth opening
Fumé Blanc starts with Sauvignon Blanc but changes the conversation. Circulus wild ferments its estate fruit in barrel, creating a wine with more weight, texture and savoury depth than the crisp-and-simple style many people expect from the variety.
It’s regeneratively farmed, minimal intervention and certified Sustainable Winegrowing Australia.
Meet the maker
Circulus is John White’s second chance at wine. More than 30 years after first wanting to become a winemaker, John and wife Kim bought a tired Bellarine vineyard and brought it back to life. A full-circle return that now shapes every bottle they make.
Pair it with
Grilled snapper · Goat cheese tart · Roast chicken with herbs
